Madison (and Julia’s) Best-Ever Lasagna

  • 12 Lasagna noodles
  • 1 c. Mozzarella cheese
  • 1/3 c. Parmesan Cheese

Pasta Sauce Mixture

  • 1 lb. Ground Beef
  • 1 Onion
  • 2 Jars Pasta Sauce (about 5 cups)
  • 1/2 c. Fresh Parsley

Cottage Cheese Mixture:

  • 2 c. Cottage Cheese
  • 2 Eggs
  • 1/4 c. Spinach
  • 1 c. Mozzarella Cheese


  1. Cook the lasagna noodles according to package instructions.
  2. Fry ground beef in a skillet until no longer pink.
  3. Add diced onion to the ground beef and cook until translucent.
  4. Mix the pasta sauce and fresh parsley in with the ground beef mixture.
  5. In a separate bowl, combine the cottage cheese, eggs, spinach, and 1 cup of grated mozzarella cheese.
  6. Layer the lasagna as follows:
    Bottom layer: Small amount of pasta sauce mixture.
    Next layer: 3 lasagna noodles
    Next layer: 1/2 of remaining pasta sauce mixture
    Next layer: 3 lasagna noodles
    Next layer: Cottage cheese mixture
    Next layer: 3 lasagna noodles
    Next layer: The rest of the pasta sauce mixture.
    Next layer: 3 lasagna noodles
    Top layer: Mozzarella cheese, parmesan cheese
  7. Cover with foil and bake at 350 F degrees for 45 minutes. Uncover and bake for an additional 10 minutes or until cheese looks bubbly.
  8. Let sit for 10-15 minutes before serving.
