    Mennonite Rollkuchen Recipe

    When I was young, my mom made a lot of mennonite recipes. In fact, she had a cook book called “The Mennonite Treasury of Recipes” which has since been handed down to me. One of my favorite recipes from the mennonite cookbook were the summer cookies known as Rollkuchen. Rollkuchen (roll cookies) is almost like an odd shaped doughnut. They are primarily served in summer with icing sugar and watermelon. A few years ago, a couple of friends came over to make rollkuchen in my kitchen.     Recipe by Chantelle Fehr Yields: 1 loaf Ingredients: 3 Eggs 1 1/4c. Sugar 1c. Sour Cream 3/4 c. Vegetable Oil 2 Tbsp. Lemon Zest 1 Tbsp. Lemon Juice 1 ½ Tbsp. Lemon Extract 1 ½ c. All Purpose Flour 2 tsp. Baking Powder 1/2 tsp. Salt Glaze: 1 c. Icing Sugar 2 ½ Tbsp. Lemon Juice Directions: Whisk your eggs, sugar and sour cream together well.     Recipe by Chantelle Fehr Ingredients: 3-4 pounds Stewing Beef 1 large Onion 1 Green Pepper 1/4c. Lard/Shortening 1 ½ tsp. Salt Pepper to taste 2 tsp. Paprika 4 c. Warm Water 2 Beef Bouillon Cubes 1 large can Diced Tomatoes 1 ½ c. Cold Water and 1/2c. Flour to make the slurry Directions: Cut your meat into small cubes, my stewing beef cubes come so large I usually end up cutting each one into 4 smaller cubes.     Recipe by Madison Turner Ingredients  12 Lasagna noodles 1 c. Mozzarella cheese 1/3 c. Parmesan Cheese Pasta Sauce Mixture 1 lb. Ground Beef 1 Onion 2 Jars Pasta Sauce (about 5 cups) 1/2 c. Fresh Parsley Cottage Cheese Mixture: 2 c. Cottage Cheese 2 Eggs 1/4 c. Spinach 1 c. Mozzarella Cheese Instructions:  Cook the lasagna noodles according to package instructions.     Mother’s Day Sugar Cookies

    Recipe by Madison Turner (This recipe makes a small batch. Double the ingredients for a larger batch.) Ingredients: 1/2 Cup Butter or Margarine  1 Cup Sugar 1 Egg 2 tbsp Milk or Cream 1/2 tsp vanilla 1 3/4 Cup Flour 2 tsp Baking Powder 1/2 tsp Salt  Directions: Preheat the oven to 375. Cream together the butter and sugar followed by the egg, milk and vanilla.  In another bowl, combine the flour, baking powder and salt.
