When I was young, my mom made a lot of mennonite recipes. In fact, she had a cook book called “The Mennonite Treasury of Recipes” which has since been handed down to me. One of my favorite recipes from the mennonite cookbook were the summer cookies known as Rollkuchen. Rollkuchen (roll cookies) is almost like an odd shaped doughnut. They are primarily served in summer with icing sugar and watermelon. A few years ago, a couple of friends came over to make rollkuchen in my kitchen. Recipe by Chantelle Fehr Yields: 1 loaf Ingredients: 3 Eggs 1 1/4c. Sugar 1c. Sour Cream 3/4 c. Vegetable Oil 2 Tbsp. Lemon Zest 1 Tbsp. Lemon Juice 1 ½ Tbsp. Lemon Extract 1 ½ c. All Purpose Flour 2 tsp. Baking Powder 1/2 tsp. Salt Glaze: 1 c. Icing Sugar 2 ½ Tbsp. Lemon Juice Directions: Whisk your eggs, sugar and sour cream together well. Ingredients: 1/2 Cup Butter or Margarine 1 Cup Sugar 1 Egg 2 tbsp Milk or Cream 1/2 tsp vanilla 1 3/4 Cup Flour 2 tsp Baking Powder 1/2 tsp Salt Directions: Preheat the oven to 375. Recipe by Chantelle Fehr Ingredients: 6 cups peeled, cored and sliced Apples 1 tsp. Lemon Juice 1 tsp. Lemon Zest 3 Tbsp. Corn Starch ½ c. White Sugar Topping: 1 1/4 c. Brown Sugar 1 1/2 c. all-purpose Flour 2 tsp. Cinnamon 1/2 c. Butter Directions: Mix the apples, lemon juice, cornstarch and white sugar in a bowl until apples are well covered. In a separate bowl, mix the Brown sugar, flour and cinnamon together. Cut in the butter until your mixture is crumbly, I used a pastry blender. Recipe by Chantelle Fehr Yields 4 single layer pies or 2 double layer pies Ingredients: 5 c. Flour ½ tsp. Baking Powder 1 tsp. Salt 3 Tbsp. Sugar or 2 Tbsp. Brown Sugar (I always use Brown Sugar) 1 lb Lard 1 Egg, slightly beaten 1 Tbsp. Vinegar Cold Water Directions: Mix Dry ingredients Cut lard into dry ingredients In a 1c. Glass measuring cup, crack egg and slightly beat. Add vinegar and mix. Add cold water into the mixture in a measuring cup until it measures 3/4c. Add wet ingredients into dry and mix.
