    Mennonite Rollkuchen Recipe

    When I was young, my mom made a lot of mennonite recipes. In fact, she had a cook book called “The Mennonite Treasury of Recipes” which has since been handed down to me. One of my favorite recipes from the mennonite cookbook were the summer cookies known as Rollkuchen. Rollkuchen (roll cookies) is almost like an odd shaped doughnut. They are primarily served in summer with icing sugar and watermelon. A few years ago, a couple of friends came over to make rollkuchen in my kitchen.     Perogy Casserole

    Ingredients: 9 lasagna noodles 2 cups of dry cottage cheese 3 cups of mashed potatoes (3-5 medium potatoes) salt & pepper 1 cup of chopped onion 1 egg 2 tsp. onion salt 2 cups of shredded cheese 1/2 cup of margarine or butter 1 package (about a pound) of bacon Instructions: Preheat oven to 350 degrees. Cook lasagna noodles as per Instructions. Boil the potatoes. I don’t peel my potatoes, but you can if you prefer. While that’s cooking, chop onion, bacon, and grate your cheese.  Fry bacon until crispy. Remove from pan, leaving the grease behind. (I pour my grease into a cup and scoop it into the garbage…

    Easy Greek Pasta Salad

    Ingredients: Fusilli Pasta Feta Cheese (crumbled or cubed) Zesty Itallian Salad Dressing Cherry Tomatoes Cucumber Black Olives Red Onion Feta Cheese Other vegetables you might like to add: Green Pepper Red Pepper Broccoli Green Onions How much of each? Well it depends on the size of your family. I’ll usually cook one package of fusilli and use about 1 cups of feta (we like a lot of feta!) for a medium bowl.     There are so many ways to make spinach salad–different cheese, different nuts, and different fruit give each salad a unique blend of flavor. My favorite is apples, walnuts, and brie cheese with my homemade raspberry-poppy seed dressing. I tend to think that the taste is amazing because the dressing is so good!
